
An easy gluten-free stir-fry is a perfect and flavorful weeknight dish that comes together in just 20 minutes with minimum ingredients. The key to making it gluten-free is a simple swap of wheat-based noodles for gluten free options, and a switch of the sauce, replacing traditional oyster sauce and soy sauce (which normally uses wheat) for a gluten free alternative.
Nowadays, you can find a variety of gluten free noodles online or in various markets. For this recipe, I chose Organic Edamame Spaghetti from Explore Cuisine. Edamame noodles are great for stir fries as well as noodle soups. You can use any of your choosing. Just follow the instructions for how to cook.
Pro tip: When boiling the noodles for this recipe, make sure to slightly under cook the noodles by about 1 minute since you will further cook the noodles in a frying pan later. Otherwise, it’s too easy for overcooked noodles to break under the intense direct heat of a frying pan!
The sauce base, can use ingredients like chicken broth, rice vinegar, sesame oil, honey or brown sugar, fresh ginger, or garlic depending on the type of Asian flavor you crave. You can add any protein like chicken, beef, pork, shrimp, or tofu as well. This recipe just sticks to the basics of oyster sauce and soy sauce, and no protein for maximum efficiency. Whisking these ingredients together takes just a few minutes, and you can even prepare the sauce ahead of time to make the cooking process even quicker.

Gluten Free Asian Stir Fry Noodles
Ingredients
- ½ lbs Gluten free noodles
- 4-6 cloves Garlic
- 2 Scallion (green onion)
- ¼ white or yellow onion
- 1 tbsp Gluten free oyster sauce
- ½ tbsp Gluten free soy sauce
- 1 tsp Brown sugar
- 1 tbsp Neutral oil
Instructions
- Boil water and cook the ½ lbs Gluten free noodles per packaging instructions. Slightly under cook the noodles (~1 minute less than recommended) since you will further cook the noodles in a frying pan later.
- Cut ¼ white or yellow onion into strips. Cut off the white ends of the 2 Scallion, then chop into thin slices. Peel and mince 4-6 cloves Garlic. Separate out the whiter parts of the scallion from the greener parts.
- Add 1 tbsp Gluten free oyster sauce, ½ tbsp Gluten free soy sauce, and 1 tsp Brown sugar into a small bowl. Stir well.
- Heat up a medium to large frying pan on medium heat, then add 1 tbsp Neutral oil.
- When oil is hot and before it smokes, turn up to high heat and add chopped onion. Stir and cook for 30-45 seconds until aromatic. Add garlic and cook for another 30-45 seconds.
- Add sauce mixture and allow to simmer for 10-15 seconds. Make sure to stir well so sauce doesn't stick to the pan.
- Add cooked noodles to the pan and continue to stir so the sauce evenly coats the noodles. Cook for 30 seconds and taste. If it needs to be saltier. add another ½ tbsp of oyster sauce. Continue to cook another 30 seconds to 1 minute.
- Turn off the heat, then add the whiter parts of the chopped scallions. Stir the scallions into the noodles.
- Plate. Add the greener parts of the scallions to the noodles as garnish. Enjoy!
