
Hi ‘m Steven, a millennial living in Southern California with my beautiful wife and handsome husky, Taro. Until a few years ago, I couldn’t cook to save my life. Literally.
When I was 29, I suddenly developed a gluten intolerance that gave me serious episodes of eczema all around my hands and neck. At one point, the skin around my fingers got so bad that it hurt to type on a keyboard. I felt useless and hopeless. I had no idea what was wrong with my body, and I didn’t see a way out. That was a low point.
My future wife suggested that I try cutting certain things out of my diet to see if it would help. I reluctantly went cold turkey on soy, dairy, and wheat. In three weeks, my skin cleared up. We were onto something. After some more experimenting, we realized that I had a gluten intolerance. We found the source of the issue. Great!
But there were three problems:
First. I had no idea just how many foods contained wheat. And, I didn’t know how to cook anything gluten free.
Second. Gluten-free versions of non-gluten free things (usually) suck. I could eat, but I had lost joy in food that once brought me so much delight.
Third. Gluten free versions of things are expensive, y’all. And I work long hours, so I didn’t have hours to cook every meal.
To survive, I had to learn how to cook gluten free. I had to do it on a budget. And, I had to work within my busy work schedule.
That’s what this website is about. I’ve learned a lot of different recipes and hacks for how to eat gluten free and healthier over the years. Some recipes are gluten free versions of things and others are just naturally gluten free. All are tasty! I want to share those with you.
